Is there anything more classic than chocolate covered strawberries for Valentine’s Day? What about strawberry creme filled chocolates? For some reason, strawberries and chocolate are America’s go to treat for Valentine’s day.
I’m combining America’s favorite Valentine flavors with my favorite treat, cookies!
This roll out recipe recipe is perfect for cut out cookies to decorate or pretty enough to stay plain. It won’t spread and your cookies will keep their shape. But, best of all, they’re delicious.
2 cups salted butter (at room temperature
2 cups sugar
2 large eggs
1 tbsp vanilla
4 cups all-purpose flour
1 1/2 cups cocoa powder
1 tsp salt
2 tsp. corn starch
1 cup mini chocolate chips
1 package freeze dried strawberries, coarsely chopped.
In a stand mixer, cream the butter and sugar. Add the eggs and vanilla until incorporated. Gently mix in the remaining dry ingredients ( flour, cocoa powder, salt, cornstarch). Lastly, mix in the mini chocolate chips and freeze dried strawberries.
Roll the freshly made dough in between 2 pieces of parchment paper. You will get about 2 sheets of dough depending on how thick you roll the dough. Chill the dough in the freezer for 10 minutes before cutting out and bake dough slightly chilled.
Bake at 350 for 10 minutes or until cookies are thoroughly baked.
